Fermentation in tank and oak barrels with regular "lees stirring." Matured in barrel for 6 months. Stone fruit, tangerine, gooseberry and melon characters with a full, rounded creaminess on the palate.

Regular (4-5 times daily) punch-downs of grapes with extended skin maceration. Matured in French oak barrels for 20 months. Cranberry, red berry and layers of fruit harmonize perfectly on the palate.

CHARDONNAY 2015

Whole-bunch pressed, fermented in French oak. Regular "lees stirring" follows. Matured for 9 months. Vanilla-oak essence, melon and lemongrass aromas with a creamy, buttery palate.

SHIRAZ 2015

Regular punch downs of grapes with extended skin maceration. Matured in French oak barrels for 20 months. Jasmine, pepper spice, melba toast and sweet vanilla, with beautiful oak and tannin integration.

BLACK SERIES MCC 2013

Base wine matured in French barrel for 10 months. Secondary fermentation in bottle on the lees for 52 months. Green apple, honey oats, biscuit and lime characters. Delicate tiny and persistent bubbles. Elegant Brut style MCC.

VINE DRIED SAUVIGNON BLANC 2017

Clean juice transferred to old French oak barrels. Five months’ barrel maturation.Aromas of dried pineapple, mango and roasted sweet notes. Spices complement a refreshing palate of apricot kernels and honey.
